Hi, I’m Jane — a self-taught baker based in Melbourne. I discovered my love for baking during the pandemic.

I love exploring different techniques and applying new skills to my cake designs — from fondant and chocolate modeling to wafer paper crafting, cream flower piping, and even rice paper art. Each method brings something unique to the final creation.

Buttercream cakes are one of my favourites. They offer a longer shelf life, greater flexibility for decoration, and a balanced texture — not as dense as mud cakes, yet still soft, chewy, and full of flavour.
On the other hand, chiffon cakes are known for their lightness and fluffy texture, making them a popular choice. However, due to their delicate structure, it's best to keep the decorations simple and light.
Sometimes, I combine the best of both worlds by pairing chiffon or sponge cake with buttercream icing — creating a light yet flavourful base with room for more intricate decoration.

Cookie-making is another one of my favourite baking activities. Decorating cookies can be time-consuming, but I find it so rewarding. I usually use royal icing, though sometimes I switch to buttercream for a softer finish. Since royal icing can be quite sweet, I try to keep the layers thin — and the final results always bring a smile.

I also enjoy crafting little edible elements to enhance my cakes, like macarons, meringue kisses, chocolate balls, isomalt sugar pieces, and jelly shapes. These details add personality and fun to each bake.
